Breakfast - Greens with Quinoa & Eggs Featured

Greens with Quinoa & Eggs 

Ingredients:2 eggs , extra egg white ,Chopped Greens, such as BeetGreens, Kale , ect. Spinach , Cooked Quinoa.

In a medium pan put a small amount of water enough to slightly blanch greens. After a few minutes of greens blanching add eggs on top of greens. Make sure heat is turned down low . Cover till eggs are 3/4 done, (to your liking),then add Quinoa, & Spinach. Cover for a few minutes to heat Quinoa . Enjoy!!
